Ingredients: Sea salt, spices, smoked paprika, sweet paprika, lemon pepper, mace, ground pepper flakes, black pepper, allspice, cardamom, cinnamon, dried lemon peel, dried orange peel, laver, mustard powder, herbs, (ginger bay leaves, cloves) celery powder, sugar dulse.

Allergens: Celery, Mustard.

Storage: This product is supplied ambient. Store in a cool dry place and best to use within a year.

What is it?

A spice blend of dried powdered seaweed, herbs, spices and lemon and orange peel.

The laver and dulse seaweed are hand harvested in a sustainable manner from UK waters and then dried for 24 hours before being toasted to maximise the flavour. The seaweed is then ground down to become a powder which is mixed with several spices and herbs.

Once mixed it is then sealed into the iconic Captain Cat’s tin for essential store cupboard use.

What does it taste like?

This herb and spice seasoning blend is an explosion of flavour. Encompassing essences from the sea with dried laver and dulse seaweed with warm undertones of smoked paprika and chilli and a citrus twist of lemon and orange peel.

This combination of sweet seaweed umami and warm, smoky citrus elevates simple dishes and becomes a cook’s favourite pantry must have very quickly, hugging your food with a flavour embrace.

Nutritional Information

"Seaweed contains more vitamins and minerals than any land-based vegetable".

“Out of all the seaweeds Laver is the healthiest, it’s the king of all the seaweeds”.

Ole G.Mouritsen

Laver seaweed is rich in potassium, manganese, iron, calcium, and protein. The level of protein is the highest of all the seaweeds and said it can be between 30 - 50% protein. In addition, Laver seaweed is a powerhouse of vitamins and amino acids and has particularly high concentrations of Vitamin A, B2, B9, and C.

Amino acids are essential for muscle development and strength. Vitamin A is important for the immune system and helps support bone health and eye health. Vitamin B9 is important in red blood cell formation and healthy cell growth. Vitamin C helps boast antioxidant levels, lower blood pressure and helps the body repair itself.

It contains 10x as much vitamin A as spinach and 4x times as much vitamin C as apples”. Dulse seaweed provides a good source of potassium, iron, fibre and is particularly rich in iodine and vitamin B6.

Iodine’s most important role is to ensure proper thyroid function and helps regulate production of the thyroid hormones T4 and T3. Vitamin B6 promotes happiness and reduce symptoms of depression, also helps with brain health and improves your immune system.

How to use it?

Firstly, just looking at this tin in your cupboard or herb shelf will inspire culinary creativeness. For those new to Captain Cats, simply add a sprinkle to fish, such as salmon or cod before roasting in the oven. For budding chefs, add ½ a tsp into your fish cakes or crab cakes and see the difference in flavour. Or simply use to marinate your favourite meat cuts and as an addition to meat based dishes.

This seasoning is so good however, that it should not just be limited to meat and fish dishes, it is a great vegetarian/ vegan essential. Try sprinkling it on your roasted celeriac or honey roasted parsnips. A sprinkle with pan fried cabbage with a touch of coconut oil or over slow roasted beetroot.

I also use it for large party showstoppers such as paella or large pots of bouillabaisse (Mediterranean fish stew), as it brings that depth of flavour when you need it most.

Captain Cats also makes a great sauce or accompaniment  by mixing ½ tsp into a big dollop of mayonnaise or crème fraiche. Maybe add extra fresh chilli, a little squeeze of fresh lemon juice, some chopped parsley and a drizzle of olive oil to create the perfect sauce to drizzle over your roasted butternut squash.

The back story to Captain Cats Môr Seasoning

Captain Cat’s Môr Seasoning was inspired and invented for use in our multi award winning flag ship, Café Môr - the first fishing boat, solar powered, seaweed kitchen in the world.

Never satisfied with existing spice blends Jonathan decided to make his own, a spice blend that takes you on a little food journey. Developed over 2 years the seasoning was originally used in crab cakes and lobster rolls before quickly progressing to our homemade coleslaw, sauces and pickles.

Jonathan called it Captain Cats Môr Seasoning as the flavour always sent him on such a voyage of flavour, that he usually got a little poetic after eating it:

It is a seasoning “inspired by Captain Cat’s dreams of tempestuous mermaids, salty encrusted decks, exotic citrus flavours from distant shores and dark laver black stormy seas” A spice blend for all sea lovers.

Captain Cat’s Môr seasoning was launched in 2015 as part of our Beach Food Deli range, not part of any strategy but just out of cooking necessity. The deli range of seaweed products were developed both from demand from Café Môr customers and the desire to de-seasonalise the business which at the time was 100% reliant on summer trade at markets and events across the UK and Café Mor.

Café Môr started life in 2010 at local farmers markets on Jonathan’s mums 1970s tablecloth and went on to win best street food vendor in the UK twice and then one of  Lonely Planets 80 must visit food trucks around the world and selected to cater for the athletes at the London Olympic games in 2012.

Farmers markets turned into Glastonbury music festival and then turned into the famous fishing boat where it has been anchored overlooking Freshwater West beach for several years. Café Môr is now located at The Old Point House in Angle Bay, Pembrokeshire.

A (VERY) BRIEF HISTORY OF LAVER SEAWEED AND LAVERBREAD IN WALES

September 15, 2021 2 min read

No one knows precisely when people in West Wales first started eating laver, some say it was first introduced as a survival food by the Vikings, while others say it goes back to the very first inhabitants of Wales. I am a betting man so I like to bet that it was the first coastal inhabitants, and I would to take a bow to the very first man or women who took that bold step into the unknown world of laver seaweed and put it on their plate....
