What is it?

We use only the best hand harvested Welsh Sea Salt mixed with sustainably harvested laver and dulse seaweed.

Halen Mon salt

The salt is filtered naturally via mussel beds and a sandbank. Once naturally filtered the salt water is gently heated in a vacuum, so that  it boils at a low temperature. The salt water then gradually releases steam and starts to turn into a very salty brine. When the concentration of the salt in the water is high enough, Halen Mon release it into shallow crystallisation tanks and leave it there to allow the sea salt crystals to form. Once the crystals have formed, it is then harvested by hand. Finally, the flakes are rinsed in brine until they shine.

The seaweed blend

The laver and dulse seaweed are always harvested by hand in a sustainable manner and then washed several times to remove all the sand, molluscs, and any crustaceans. It is then slowly dried over 24 hours and then for the last hour toasted to maximise the flavour.

The seaweed and salt flakes are then combined and our wonderful mermaids confetti and then sealed into handy jars, ready to use and become a staple part of your pantry or cupboard. A perfect accompaniment to all dishes and creative cooking.

What does it taste like?

Fresh salty flavours combined with the earthy undertones of the dulse seaweed and then the olive mariney, laver seaweed flavour.

Nutritional Information

Laver, the king of seaweed superfoods

"Laver seaweed contains more vitamins and minerals than any land-based vegetable".

"Gram for gram, Laver contains more protein than chicken."

"Laver contains 10x as much vitamin A as spinach and 4x times as much vitamin C as apples”.

Laver is rich in potassium, manganese, iron, calcium, and protein. The level of protein is the highest of all the seaweeds and said it can be between 30 - 50% protein. I found this percentage staggering and didn't quite believe it so I've been sending a sample of dried laver to the labs every month for a year to monitor protein levels and how they change according to the seasons: On average per 100g sample, dried laver holds 35% protein, which is amazing, this means, gram for gram, Laver contains more protein than chicken.

In addition, Laver is a powerhouse of vitamins and amino acids and has particularly high concentrations of Vitamin A, B2, B9, and C. Amino acids are essential for muscle development and strength. Vitamin A is important for the immune system and helps support bone health and eye health. Vitamin B9 is important in red blood cell formation and healthy cell growth. Vitamin C helps boost antioxidant levels, lower blood pressure and helps the body repair itself.

“Out of all the seaweeds Laver is the healthiest, it’s the king of all the seaweeds”.

Ole G.Mouritsen

Dulse seaweed

Dulse contains high levels of calcium, iron, magnesium and potassium which is essential for your bone health and strength and can help lower your blood pressure and health of your thyroid gland.

Also has good levels of vitamin A which helps improve your eye sight and acts as a antioxidant. Dulse is also rich in vitamin C which helps the body increase its white blood cell count and contributes to growth and repair. Dulse is also high in fibre which helps with your digestive system.

In addition, B12 is found in Dulse which is fantastic for vegetarians and vegans as B12 is usually found in meats. Vitamin B12 helps keep your blood and nerve cells healthy and helps make DNA. It also helps prevent megaloblastic anemia, a blood condition that makes people tired and weak.

How to use it?

Mermaids Confetti is definitely a store cupboard essential. And probably something to consider as a desert island necessity. Season away, from your morning eggs to your rainbow salads to your roasted potatoes. Even try a little pinch in porridge. Treat it like normal salt, as each sprinkle will be simply adding an extra depth of flavour to your dishes. An  all-time Beach Food favourite is homemade dark chocolate with a sprinkle of Mermaid Confetti on top.

The back story to Mermaid Confetti No. 2 – Sea Salt and Seaweed Blend

Mermaid Confetti was invented for use on our multi award winning flag ship Cafe Môr - the first fishing boat, solar powered, seaweed kitchen in the world. We have always been a big fan of fantastic sea salt and it just seemed like a natural progression to pair this with our lovely laver and dulse and use when cooking and creating in our seaweed kitchen.

One day a young lady visited Café Mor and saw Sea Salt Seaweed blend that we use and commented that it looked like Mermaid Confetti, and so the perfect name for the perfect seasoning was born. Mermaids Confetti became our second Beach Food Deli item back in 2014 when the range of seaweed deli products started to help de-seasonalise the business and encourage people to use seaweed in everyday cooking.

Cafe Môr started life in 2010 at local farmers markets on Jonathan's mums 1970s tablecloth and went on to win best street food vendor in the UK twice and then became one of Lonely Planets 80 must visit food trucks around the world. We were also selected to cater for the athletes at the London Olympic games in 2012.

Farmers markets turned into Glastonbury music festival and then turned into the famous fishing boat where it has been anchored overlooking Freshwater West beach for several years. It is now located at The Old Point House in Angle Bay, Pembrokeshire.

A (VERY) BRIEF HISTORY OF LAVER SEAWEED AND LAVERBREAD IN WALES

September 15, 2021 2 min read

No one knows precisely when people in West Wales first started eating laver, some say it was first introduced as a survival food by the Vikings, while others say it goes back to the very first inhabitants of Wales. I am a betting man so I like to bet that it was the first coastal inhabitants, and I would to take a bow to the very first man or women who took that bold step into the unknown world of laver seaweed and put it on their plate....
