Classic Welsh rarebit made with traditional stout or milk, served with a sprinkling of our Mermaids Confetti.

25g Salted Butter.
25g Plain Flour.
100ml of Stout or Milk.
150g Mature Cheddar Cheese, Grated.
1tsp English Mustard.
1 Bay Leaf.
4tsp Worcestershire Sauce.
Pinch of Paprika.
Pinch of White Pepper.
4 Slices of Bread.
1 or 2 Sprinkles of Mermaid Confetti.
Melt the butter in a saucepan and stir in flour. slowly cook over a low heat for 60 seconds.
Stir constantly.
Add the stout or milk and bring to a simmer for 3 minutes. keep stirring until thick and smooth.
Add the cheese, bay leaf, mustard, Worcestershire sauce, paprika, pepper and Mermaid Confetti.
Cook until the cheese melts and you have a beautiful full smooth hot cheesy sauce.
Toast the bread and then smooth the cheese sauce all over.
Place under a grill for 30 seconds until you have a lovely golden colour.
