Pan Fried Monkfish

Quick and easy but very indulgent and luxurious!
Ingredients

2 Monkfish Tails
-
Olive Oil
-
1 Red Onion
-
2 Courgettes
-
2 Cloves of garlic
-
1red and 1 yellow pepper
-
2 Teaspoons of Welshman's Caviar
-
2 Teaspoons of Welsh Sea Black Butter
-
Handful of salad leaves
-
Salt and Pepper
Directions
Preheat oven to 200C
Cut vegetables into bite sized pieces and finely chop garlic cloves. Place on a baking tray, drizzle with olive oil, season and mix
Place tray into oven and cook for 30 minutes or until the vegetables are golden and cooked through
Heat Frying pan to nice hot temperature. Put a little drop of olive oil in the pan and start cooking the Monkfish
Once one side of the fish is cooked and golden, turn and continue cooking. Repeat the process until it is golden all round, for very large tails it would be best to place in the oven to make sure it is cooked in the middle.
Remove fish from heat and place a teaspoon of Welsh Sea Black Butter on top of the fish
Place salad leaves, roasted vegetables and Monkfish on a plate and top with Welshman's Caviar
