Pan fried Dab with Welsh Sea Black Butter

Ingredients

  • 1x Dab (or any small flat fish)
  • 1/2 tin of anchovies
  • 1 TSP of Welsh Sea Black Butter

  • Handful of mixed leaves (rocket, lettuce, spinach)
  • Cherry tomatoes
  • Yellow pepper sliced
  • 1 carrot grated
  • 4 radishes grated
  • Sea Salt and Ground Pepper
  • Drizzle of freshly squeezed lemon and orange juice

Directions

  1. Heat up a frying pan on a medium to high heat and put a drizzle of olive oil in the pan. 

  2. Season both sides of the fish and place in frying pan

  3. Allow the fish around 5 to 8 mins on the first side, this will depend on the size of your fish but watch the edges and as they start crisping up its time to flip the fish over

  4. While the fish is cooking prepare all your salad ingredients, toss together and place on a large plate 

  5. Add the anchovies to the frying pan and finish cooking the fish with a good tablespoon of Welsh Sea Black Butter

  6. Place the fish on top of the salad and drizzle with your citrus juices
