Laverbread Pesto is delicious, I was experimenting making homemade pesto with Wild Garlic and I had some laverbread in the fridge and I thought why not try making pesto with seaweed. Honestly I didn't think it would work but it does and it works really well. One of my favourite filled flat breads is the laverbread pesto with Welsh Cheddar Cheese and tomatoes. Anyhow this is a simple pasta dish with our seaweed pesto to get you going.

200g pasta
Olive oil
Handful of flat leaf parsley
Squeeze of half a lemon
Handful of grated parmesan
2 tbsp of Laverbread Pesto
Place the pasta into a pan of boiling salted water and cook according to the pack’s instructions
Once the pasta is cooked, drain and return to the pan and add the pesto and drizzle of olive oil and give it a good stir
Place the pasta onto a plate and squeeze some lemon juice on and add some roughly chopped parsley and parmesan to garnish
