Laverbread, Manchego and Spinach Omelette

This is a great breakfast or brunch pick me up, full of protein, amazingly tasty and will keep you going strong all day long.

Ingredients
-
Drizzle of olive oil
-
3 eggs
-
2 tbsp of Laverbread
-
A couple of handfuls of spinach
-
A good chunk of Manchego Cheese (grated)
-
Welshman's Caviar
-
Salt and Pepper
Directions
Heat up a large frying pan on a medium heat with a drop of olive oil
As the pan is warming up, whisk up the eggs with the laverbread and add a pinch of salt and pepper
Pour the egg and laverbread mix into the frying pan and tilt it around until the egg mix has covered the whole base of the frying pan
Reduce the heat and let it cook slowly, add the grated cheese, wilted spinach and Welshman's Caviar
Cook slowly until the edges start looking cooked, this takes around 5 minutes
Then season and gently fold the omelette over
For a bigger serving add optional sides such as Baby tomatoes, Slow cooked mushrooms, Crispy bacon or Rocket and salad leaves
Serve warm with your favourite optional sides, maybe add another drizzle of olive oil and definitely best with a black coffee!....... enjoy
