Grass Kelp Salad with Fennel and Orange

A quick and easy Salad that gives you a big hug of flavour and comfort, a favourite from the Cafe Môr development kitchen. Can be served chilled but we prefer this salad slightly warmed !
Ingredients
- 1 tbsp of coconut oil
- 1 sliced red onion
- 5 crushed and diced garlic cloves
- 1 or 2 red chillies diced
- 2 bulbs of fennel thinly sliced
- 1 or 2 oranges peeled and sliced
- 1 tbsp of fish sauce
- 1 tbsp of soy sauce
- 1 tbsp of grass kelp
- Season to taste
Directions
Heat up a large pan and add the oil and onions and slowly caramelise.
Add the garlic and chilli to the pan and cook for a further 5 minutes
Add rest of the ingredients and cook until coloured and Al dente
Season to taste
Optional Extras : Top with toasted almonds, sesame seeds or crushed walnuts
Serve warm
