Breakfast Pizza with Seaweed

A winner for breakfast or brunch! this protein packed and super tasty pizza, will have you set up for the day and raring to go! Great for weekends and downtime days!
Ingredients
- 100g laverbread
- 2 tbsp of oats
- 1 or 2 eggs
- Handful of Spinach leaves
- Handful of grated cheddar cheese
- Sliced spring onion
- A couple of diced baby tomatoes
- Half an avocado
- Season with Sea Salt and Pepper to taste
Directions
Warm up an oiled frying pan on a medium heat. We like extra virgin olive oil.
Mix up the laverbread and porridge oats and season to taste
Spread the laverbread mix into the frying pan. Using a table spoon and a little water, spread the laverbread mix across the pan until its around 0.5 - 1 cm thick. This is your Pizza base!
Let the laverbread mix pizza base cook slowly until it's golden and firm on the underside. This usually takes between 5 - 10 mins.
Once the bottom is golden and firm, flip the base over in the pan and add the beaten egg and grated cheese onto the top. Spread the egg and cheese mixture across the whole of the pizza base, until its well covered.
Arrange all of the other ingredients on top of the cheese and egg mixture and season again to taste.
Allow everything to cook for another 5-10 minutes until the underneath of the base that's touching the pan is golden and crispy too.
Try adding additional toppings such as cooked and diced black pudding, smoked bacon or chorizo, or tasty smoked salmon.
Serve warm and cut into slices on a big bread board.
