Bread Sauce with Wrack Seaweed

Bread sauce was introduced to me by Granny Agnes and I have been addicted every since. Apparently the recipe can be traced back to medieval times and so simply it is a true classic and should be an essential part of every Christmas dinner, though it is one of those love or hate dishes and no in between.


  • Full Fat Milk 600ml
  • Salted Butter 50g
  • 1 Onion diced
  • 6 Cloves
  • 1 tsp of White Pepper
  • 1/2 tsp of Sea Salt
  • 2 Garlic Cloves diced
  • 1 Bay Leaf
  • 3 Sprigs of Fresh Thyme
  • 1 tsp of Wrack
  • 100g Breadcrumbs
  • 4 tbsp of Single Cream
  • Pinch of Nutmeg


  1. Simmer the milk, butter, onion, cloves, pepper, garlic, herbs and wrack for around 30 mins.
  2. Strain and return liquid to the pan. Add the breadcrumbs and cream and simmer for 5 mins.
  3. Season to taste and add the fresh nutmeg.
